  • 150g butternut pumpkin
  • 2 zucchinis grated
  • 90g grated halloumi
  • Chopped coriander
  • 1 onion
  • 2 cloves of garlic
  • 1 table spoon of sweet chilli sauce
  • 1 tbl sweet curry powder / garam masala
  • Pinch of salt and pepper
  • ½ cup of bread crumbs
  • 10mls peanut oil
  • 1 pack of instant brown rice (250g)
  • 1/2 cup natural yoghurt


  • In a medium saucepan, brown off onion and garlic.
  • Add grated pumpkin and zucchini and stir over medium heat.
  • Add sweet chilli sauce and garam masala and continue to fry for 5 – 7 minutes.
  • Place mixture in mixing bowl and add grated halloumi, salt, pepper and brown rice.
  • Form into small hamburger like patties and roll in bread crumbs and fry in batches, transferring to oven once browned on each side.
  • Be gentle flipping them as they are fragile but don’t worry if they lose their shape or fall apart, simply squash back together.
  • Serve with small amount of natural yogurt.
