Ingredients
- 150g butternut pumpkin
- 2 zucchinis grated
- 90g grated halloumi
- Chopped coriander
- 1 onion
- 2 cloves of garlic
- 1 table spoon of sweet chilli sauce
- 1 tbl sweet curry powder / garam masala
- Pinch of salt and pepper
- ½ cup of bread crumbs
- 10mls peanut oil
- 1 pack of instant brown rice (250g)
- 1/2 cup natural yoghurt
Method
- In a medium saucepan, brown off onion and garlic.
- Add grated pumpkin and zucchini and stir over medium heat.
- Add sweet chilli sauce and garam masala and continue to fry for 5 – 7 minutes.
- Place mixture in mixing bowl and add grated halloumi, salt, pepper and brown rice.
- Form into small hamburger like patties and roll in bread crumbs and fry in batches, transferring to oven once browned on each side.
- Be gentle flipping them as they are fragile but don’t worry if they lose their shape or fall apart, simply squash back together.
- Serve with small amount of natural yogurt.
