Ingredients
- 500g peeled potatoes
- 1/4 cup (50ml) butter melted
- 1/2 tsp salt
- 25g of cheese
- 1 can (220g) salmon drained
- 1 cup of lightly steamed broccoli
- 3 eggs
- 175ml skim milk
Method
- Preheat oven to 220 degrees.
- Bring 50mls of butter to a melt.
- Wash the potatoes and shred thoroughly then add to a large bowl.
- Now add the melted butter and salt to the shredded potato and mix evenly.
- Add this mix to a pie plate and with a spoon ensure it is evenly spread out at the bottom and up the sides of the pie plate to make a crust.
- Place in the oven and bake for 20 – 25 minutes then remove from the oven and lower the temperature to 180 degrees.
- Now spread the salmon, broccoli and cheese evenly on top of the slightly baked potato crust.
- In a separate bowl whisk together the milk and eggs and then pour evenly over the top.
- Now bake for 30 – 35 minutes back in the oven.
- Take out and allow the dish to cool then serve and enjoy!
